Dark Chocolate Zucchini Bread

Well hello all!!  I am back!!  :)

So happy to finally say that!  Thank you to everyone who has stuck with me here at Healing Cuisine and on our Facebook page over the last few months.  I have been away while my "day job" kept me extremely tapped out.   If you remember my posts back in December/January of this year, my husband, Dr. Dave, and I opened our dream business the first week of the new year.  Our natural health clinic is called Triad Health Center and we are located in Greensboro, North Carolina.  I am happy to say I am finally at a place where I can care for our almost 2 years old Austin, manage clients and keep up with posting recipes again.  Yay!  I have a whole list of recipes to share from all the way back in December!  It's about time  :)

Hope you all have been well while I have been away.  I appreciate all the emails you have sent checking in and sharing your pictures of recipes from the archives.

August marks my 4th year anniversary since beginning this blog.  To celebrate, Healing Cuisine is getting a facelift!  Look forward to a BRAND NEW HealingCuisine.com in the coming weeks.  We are putting the final touches on the new design.  Some things to look forward to: simpler sleeker design, better search function, labels & categories for easy searching, easier commenting function, and more!  I hope you'll enjoy the new layout coming to Healing Cuisine in less than two weeks!

And now, on to a NEW RECIPE!  If you're growing zucchini at home this year, you've probably still got it coming out of your ears...  For me, I've made every single zucchini recipe from my archives already this summer (check them out here).  I was in need of something new.  Dr. Dave and I sure love our Advanced Plan zucchini bread, but eating it every week all summer long gets a little boring.  It was time to try making chocolate zucchini bread to fit the Advanced Plan.  Here's what we came up with, and boy is it good!  It has more of a moist cake texture than bread texture, which comes with using almond flour.  It was really good!  And it passed the toddler test!  Austin gobbled it up and asked for more!  I love it when we can take an already healthy grain-free recipe and sneak in vegetables.  Makes me feel like a supermom.  :)


Dark Chocolate Zucchini Bread
Makes 8-12 Servings

1 1/2 cups almond flour
1 1/2 tsp baking soda
1/4 cup raw cacao powder or cocoa powder
2 teaspoons ground cinnamon
1/4 tsp sea salt
1 cup organic zucchini, finely grated
1 egg (room temp)
1/4 cup organic full fat plain Greek yogurt or coconut milk (room temp)
1/4 cup coconut oil, melted
1 tsp pure vanilla extract
1 tsp pure liquid stevia
1 tsp apple cider vinegar
1/2 cup raw pecans, chopped (optional)
1/2 cup 73+% dark chocolate chips (optional)

1.)  Preheat oven to 350 degrees F.  Line a medium loaf pan with unbleached parchment paper.  In a large bowl, mix together the almond flour, baking soda, cacao powder, ground cinnamon and sea salt.

2.)  In a medium bowl, whisk the egg until foamy.  Whisk in Greek yogurt, coconut oil, vanilla, stevia and apple cider vinegar until well combined.

3.)  Wrap the grated zucchini in a clean tea towel or 3-4 layers of paper towel.  Over a bowl or sink, squeeze out the excess water from the zucchini.  Shake the zucchini from the towel into the bowl of liquid ingredients.  Stir to combine the grated zucchini.  Stir in the chopped pecans and chocolate chips.

4.)  Fold in the flour mixture and stir until just combined.  Spoon the batter into loaf pan and bake for approximately 30-35 minutes or until a knife inserted into the center comes out clean.  Remove from oven and cool in pan for 10 minutes, then remove the loaf to a wire rack to cool completely before cutting.  Store in fridge in an airtight container.

Four More One Pot Wonder Dinners

I am making an exception to our "Wordless Wednesdays."  I have too many recipes to share with you, and I need to honor someone extra close to my heart...

Yesterday was my son Austin's first birthday!  I am in awe of our little man each and every day as he is growing up and learning so quickly.  Year one has been filled with SO MANY great laughs, hugs, snuggles, and joyful memories.  I am so grateful that God gave us this bright, healthy, spunky little boy.  Happy birthday Austin!


We celebrated with a simple Advanced Plan vanilla cupcake, recipe found in my Kids Birthday Party e-book.  The frosting is whipped avocado with powdered xylitol (for Austin's cupcake I used powdered sugar, because babies cannot digest sugar alcohols).  Sunday is Austin's big 1st birthday party!  I'm excited to show you the little crafts and new recipes I have been working on for his celebration.  It's going to be a fun day, I can't wait!  I'll give you a recap next week! :)


More Quick Meals Using Spice Mixes

I have more yummy and QUICK dinner recipes to share that use the spice mix ingredients from our Spice Mix Party last month.  I'm only sharing my top favorites.  There were some dishes that didn't make the cut, so please try the ones I'm including below and in yesterday's post.  They are winners!  They're now topping my go-to list!


Summer Squash Dressing
ADVANCED PLAN 
Makes 6 Servings

2 cups organic yellow or green zucchini/squash, diced
2 cups crumbled coconut bread
1/2 cup coconut oil or raw butter, melted
2 tsp dried sage
2 tsp garlic powder
1 1/2 cups cream of mushroom soup
2 eggs, beaten
1 onion, chopped
1/4 cup organic unsweetened almond milk
Sea salt and fresh pepper to taste

Preheat oven to 350 degrees F.  Grease a 2-3 quart casserole dish.  In a large bowl, stir together the squash, coconut bread, coconut oil, sage, garlic, cream of mushroom soup, egg, onion, almond milk, sea salt and black pepper.  Transfer to prepared baking dish.  Bake for 40 minutes, until lightly browned.  Let sit 5-10 minutes before serving.


Ranch Parmesan Chicken
CORE PLAN
Makes 6 Servings

6 free-range skinless chicken breasts (bone-in is okay)
1/2 cup organic sour cream
1/2 cup Healing Cuisine Mayonnaise
1 Tbsp homemade ranch dressing mix
1 cup almond meal
1/2 cup raw Parmesan cheese, grated
1 Tbsp season salt (salt-free and MSG-free)
1 tsp garlic powder
1/2 tsp fresh black pepper

Wash and dry chicken breasts.  In a large bowl, stir together sour cream, mayonnaise, and ranch dressing mix.  Add the chicken breasts and use your hands to coat the chicken in the ranch dressing.  Marinade chicken breasts in the fridge for at least an hour or overnight.  Preheat oven to 375 degrees F.  Grease a glass 9x13 inch pan and set aside.  In a separate 9x13 inch pan, combine almond meal, Parmesan cheese, season salt, garlic powder, and black pepper.  Dip marinaded chicken (remove any extra dressing) in the almond crumb mixture, covering both sides evenly.  Place crumb covered chicken in greased glass baking dish.  Cover baking dish with aluminum foil and bake for 25 minutes.  Remove foil, and bake for another 15 minutes,  until internal temperature reaches 180 degrees F and almond crust is lightly browned.  We serve with steamed broccoli or roasted veggies.  P.S., this recipe also makes great chicken strips!


Slow Cooker Italian Chicken
ADVANCED PLAN
Makes 6 Servings

6 chicken breasts (bone-in is okay, you can slice or cube the raw chicken, too)
3 Tbsp homemade Italian dressing mix
8 oz organic cream cheese, room temperature
3 cups cream of mushroom soup
2 Tbsp garlic powder

Add all ingredients to slow cooker and cook on Low for 4-6 hours.  If sauce is too thick, thin it with a little vegetable broth or almond milk.  We served over spiral brown rice noodles, but I'd like it with zucchini noodles as well.


Beef Stroganoff
ADVANCED PLAN
Makes 4 Servings

1 1/2 lbs 100% grass fed top sirloin steak strips OR ground beef
4 Tbsp coconut oil
1 onion, chopped
8 oz mushrooms, sliced
4 cloves garlic, minced or pressed
3 Tbsp homemade dry onion soup mix
2 Tbsp organic tomato paste
1 Tbsp arrowroot powder
2 cups organic sodium-free beef stock
1 cup full-fat coconut milk
Sea salt and fresh black pepper, to taste

In a skillet, heat the coconut oil over Medium-High heat.  Add the mushrooms and onion.  Saute until slightly softened and browned.  Remove to a plate.  Brown ground beef until no longer pink.  Return onion and mushrooms to pan.  Stir in garlic, dry onion soup mix, and tomato paste.  Reduce heat to Medium.  Sprinkle arrowroot powder over meat mixture and stir to combine until arrowroot is completely mixed in.  Add beef stock and  coconut milk, stirring thoroughly.  Sauce will begin to thicken as it comes to a simmer.  Reduce heat and simmer for about 5 minutes.  Remove from heat and let cool before spooning onto plates.  We serve over cooked smashed cauliflower, zucchini noodles, cauliflower rice or roasted spaghetti squash.

Spice Mix Party + 3 New Recipes

Take a gander at what a few girlfriends and I made at a Spice Mix Party we threw last month:

I'm not sure if we created the idea of a Spice Mix Party, but it sure was fun!  It all started with the realization of two Maximized mommy friends, Rachel and Jess, that pre-made spice mixes are A) SO convenient to have in the pantry, B) so gosh darn expensive, and C) commercially loaded with chemicals and preservatives.  Rachel and Jess decided to organize the spice night as a way to make delicious healthy spice mixes in bulk for $$$cheap.  When they invited me to be a part, you know I was in!

Read Rachel's account of our Spice Mix Party here!  She also lists our recipe modifications.  We had a blast cooking and mixing herbs and spices.  It was a fun excuse to get together to chat, eat, and let the kiddos mingle, too!

Here's what we made:  Dry Onion Soup Mix, Ranch Dressing Mix, Italian Dressing Mix, Taco Seasoning, and Cream of 'Something' Soup.  (In our case, we did cream of mushroom soup.)

You can make the spice mixes on your own, and still save money by making them yourself!  I also love the fact that we used organic ingredients, because conventional herbs and spices are loaded with pesticides and herbicides that concentrate as the herbs are dried.  Total, we each spent about $35 on the organic spice mixes and soups!  We each took home 2+ cups worth of each seasoning mix and 6+ 'cans' of cream-of-something soup, plenty to make months worth of tasty recipes!

WHAT TO MAKE WITH YOUR MIXES

I have waited to post about our spice party, because I wanted to share what I have been making with these new seasoning mixes.   I will share my latest recipe creations with you TODAY AND TOMORROW, so be sure to come back!  There are some great 30 Minute and One Pot Wonder meals coming!

Slow Cooked Beef Tips
ADVANCED PLAN
Makes 6 Servings

2 lbs 100% grass fed beef tenderloin, stew meat, chuck roast or chuck eye, cubed
1 onion, sliced
2 cups organic mushrooms, sliced
1 1/2 cups homemade cream of mushroom soup
1/3 cup arrowroot powder, whisked into 3 Tbsp cold water
3 cups organic sodium-free beef stock
1/2 tsp onion powder
1 tsp garlic powder
1/4 tsp fresh black pepper
1/4 tsp paprika
1/3 cup homemade dry onion soup mix
3 Tbsp Worcestershire sauce

Preheat oven to 300 degrees F.  Add cubed meat, onion, and mushroom to a 9 x 13 inch pan.  In a large bowl, whisk the remaining ingredients together.  Pour over the meat and toss to coat.  Cover with aluminum foil and bake at 300 degrees F for 3 hours.  Do not remove foil until 3 hours is reached. Serve over zucchini noodles, cauliflower rice, roasted veggies, smashed sweet potato or cauliflower mashed 'fotatoes.'  (Can be prepared in slow cooker on Low for 6 hours.)


Honey Glazed Italian Chicken
CORE PLAN
Makes 8 Servings

3 1/2 pounds skinless free-range chicken pieces (I like to use thighs and breasts, bone-in is fine)
2 Tbsp homemade Italian dressing mix
1/2 cup raw honey

Preheat oven to 350 degrees F.  Grease a large baking pan and set aside (or cover with foil/parchment paper).  Rinse chicken and pat dry with paper towels.  Lay chicken pieces evenly onto baking sheet in one single layer.  Warm honey in a small saucepan over Low heat or using a hot water bath.  With a fork, stir in dry Italian mix.  Dip and press the chicken pieces into the honey mixture, coating front and back, and place each piece back down onto prepared pan.  Bake for 50-60 minutes or until chicken is cooked through.  Serve with steamed or roasted veggies.


Cheesy Chicken Ranch Casserole
ADVANCED PLAN
Makes 8 Servings

2 1/2 cups chopped frozen organic broccoli
1-2 cups frozen organic peas
6 Tbsp homemade ranch dressing mix
2 cans organic full-fat coconut milk
1 Tbsp arrowroot powder
2 cups shredded cooked free-range chicken
1/2 cup organic mozzarella cheese
1 cup raw cheddar cheese
sea salt & pepper, to taste

Preheat oven to 350 degrees F.  Blanch the frozen broccoli and peas in boiling water for 1-2 minutes, to remove ice crystals and slightly soften the outside.  Drain and shake as dry as possible.  Set aside.  In a large bowl, whisk together the coconut milk, cornstarch, and ranch dressing mix.  Stir in the shredded chicken, blanched broccoli, blanched peas, 1/2 cup of cheddar cheese, and sea salt/black pepper to taste. Transfer to a greased 3 quart casserole dish.  Layer the mozzarella cheese slices across the top and sprinkle the remaining cheddar cheese over the top.  Bake at 350 degrees for 20-30 minutes, until heated through and cheese on top is browned.  We serve ours over wide cut zucchini noodles.  Brown rice pasta would also be tasty.

Vegetable Frittata

We've been eating a lot of frittatas lately.  For some reason I'm finding it easier to whip one of these up than our usual sunny side up eggs or an omelet.  Not to mention a frittata holds much more room for flavor combinations!  I love them!  We've been doing at least one a week, and sometimes one every day.  :)

You can use any combination of veggies, about 4 cups total for this large frittata.  My favorite right now is in the recipe below, onion, zucchini, green pepper, spinach, chicken if we have some leftover from dinner, and salsa.  Another great combo is leek, tomato and fresh rosemary. 


Vegetable Frittata
Makes 4 Servings

2 Tbsp coconut oil
1 onion, diced
2 organic zucchinis, diced
1 organic green pepper, diced
1-2 handfuls free-range chicken, cooked and chopped
2 large handfuls organic spinach
2 Tbsp organic unsalted butter
6 free-range eggs, beaten
Herbs to your liking (basil and oregano are my staples)
Sea salt and pepper, to taste
Organic unsweetened salsa, optional

1.)  Preheat your broiler with oven rack at highest level.  In a large stainless steel skillet on your stove top, add coconut oil over Medium-High heat and saute the onion, zucchini, and green pepper about 5 minutes, until softened.   Add in the chicken and heat thru for 2 minutes.  Reduce heat to Low and add the spinach on top and wilt down, about 30-45 seconds.

2.)  Add the butter to the pan, melting it down and incorporating all thru the mixture, making sure the bottom of the skillet is well coated.  Pour beaten eggs over top, tilting pan as needed to get egg mixture to coat all the veggies.

3.)  Sprinkle optional herbs over top.  Season with sea salt and pepper.  Turn off heat on stove top.  Place skillet under broiler for about 3-5 minutes, until fritata is puffy and light brown.  Remove from oven, cut into wedges and serve.  Top with fresh salsa (optional).

Questions Answered: Creamy Chicken Alfredo

"Hey wondering if you can help me out?  My daughter has made a birthday dinner request, and I want to keep it on ML plan as much as I can for her.  She wants grilled chicken and broccoli Alfredo.  Got any ideas for the sauce?  HELP!  It is the only thing she has asked for, and it's her sweet 16..."   ~ Jacquelyn
No worries, Jacquelyn!  Happy to help!  Below you'll find my signature Creamy Chicken Alfredo recipe.  I hope your daughter enjoys it and has a wonderful Sweet 16!

To make this dish, it’s super helpful to have a spiralizer.  This magical little kitchen tool lets you turn any veggie or fruit (zucchinis, carrots, sweet potatoes, jicama, beets, apples) into thin, pasta-like strands.  This particular model that I've linked above (World Cuisine brand) is the best one I have tested myself and the one I use personally.  I love that it comes with many various attachments, so you control the shape and thickness of your noodles.  For this recipe, I usually go with the medium width flat blade, to resemble fettuccine noodles.  You can use spiralized veggies as a pasta base with any kind of sauce or as a quick and easy way to prepare your veggies for a salad.  If you don’t have a spiralizer, fear not!  You can get away with thin slicing the zucchini with a peeler or grating it.

I will often serve this dish, believe it or not, with plain almond flour scones with plenty of butter (recipe can be found in my Mother's Day e-book) as they're great for dipping in the Alfredo sauce!  I also pair it with a hearty leaf salad (kale, spinach, romaine) with a sun-dried tomato basil dressing.

Healing Cuisine's Creamy Chicken Alfredo
Makes 6 Servings

ALFREDO SAUCE
2 cups organic unsweetened almond milk (plain)
2/3 cup raw cashews, soaked for at least 2 hours
1/2 cup raw Parmesan cheese, grated
1 Tbsp Bragg's Liquid Aminos
3 Tbsp raw unsalted butter
1 Tbsp fresh lemon juice
Pinch nutmeg
2-4 cloves garlic, to taste
Sea salt, to taste
Fresh black pepper, to taste

3-4 free-range boneless, skinless chicken breasts, cooked and sliced
3/4 cup organic peas, fresh or frozen
4 organic medium zucchini, spiraled
1 1/2 cups organic broccoli florets, chopped

1.)  Drain and rinse the cashews.  Add all Alfredo Sauce ingredients to a blender and blend until very smooth.  You may need to scrape down sides a few times, and will take about 10 minutes on High to blend smooth.  Taste sauce and adjust seasonings as you go along (sea salt, pepper and garlic).

2.)  In a medium saucepan, pour in the blended Alfredo Sauce.  Heat over Medium-Low, stirring often, until thickened (about 8-15 minutes).

3.)  Meanwhile, in a large saucepan, bring some water to a boil.  Drop in broccoli florets and cook for 5 minutes.  Add in zucchini noodles and peas for an additional 4-5 minutes.  Drain immediately and drop blanched veggies into a large skillet.

4.)  Turn on heat under skillet to Medium.  Add in chicken.  Top with sauce and toss everything together to coat and combine.  Heat thru.  Taste once more before serving and adjust sea salt and pepper to your liking.

Zucchini Pasta Chicken Salad


Get out your julienne spiralizer!  It's time to make a healthy serving of today's recipe!  It gets better day after day as you eat the leftovers from your fridge, so I usually double this recipe.  I use my spiralizer on the thinest noodles setting, but you could make them any thickness that you prefer.

Spiralized Thin Zucchini Noodles
Zucchini Pasta Chicken Salad
Makes 4 Servings

2 medium organic zuccchinis
2 medium organic yellow squash
1 organic tomato, diced
1 cup black olives, diced (preservative free)
1 lb free-range chicken, cooked and shredded
1/4 cup fresh parsley, chopped

DRESSING
1/3 cup olive oil
1 Tbsp Bragg's apple cider vinegar
Juice of half a lemon
1/2 tsp dried basil
1 tsp organic unsweetened mustard
Sea salt and fresh pepper, to taste

1.)  Using your spiralizer, make noodles out of the zucchinis and yellow squash.  (TIP:  Keep the zucchini and squash cores for soups/stocks or stir fry dishes.)

2.)  In a large sauce pan, bring a few cups of water to boil.  Place steam in bottom of pan and steam the zucchini and squash noodles for about 5 minutes or until tender.  Remove from heat and drain.

3.)  Toss together the noodles, chicken, tomatoes, olives, and parsley.

4.)  In a small bowl, whisk together the dressing ingredients.  Pour over the salad and toss to combine.  Enjoy warm or chill for a few hours before serving.

Zucchini Casserole

Still getting used to having fresh organic produce so early in the year.  Living in a warmer climate definitely has its benefits!  This side dish is great with grilled chicken.

Zucchini Casserole
Serves 6

2 tsp coconut oil
2 medium organic green zucchini, sliced into 1/2" pieces
4 organic scallions, thinly sliced
4 cloves garlic, minced
1 tsp dried marjoram
1 tsp sea salt
1/2 tsp fresh black pepper
2 medium organic yellow zucchini, sliced into 1/2" pieces
1/2 cup fresh dill, chopped
1/4 cup fresh flat-leaf parsley, chopped
5 free-range eggs, lightly beaten
5 egg whites, lightly beaten
1 organic tomato, thinly sliced
2 ounces organic feta cheese, crumbled

1.)  Preheat oven to 325 degrees F.  Heat 1 teaspoon coconut oil in a large skillet over Medium heat. Add green zucchini, half of the scallions, half of the garlic, 1 teaspoon marjoram, 1/2 teaspoon sea salt, and 1/4 teaspoon pepper.  Saute until zucchini has softened and starts to brown, about 7 minutes.  Transfer to a large bowl and set aside.

2.)  Repeat process with yellow zucchini and remaining coconut oil, scallions, garlic, 1/2 teaspoon marjoram, 1/2 teaspoon salt, and 1/4 teaspoon pepper.  Transfer to bowl with cooked green zucchini; let sit until cooled.  Drain and discard any liquid.

3.)  Add dill, parsley, and eggs to zucchini, stirring to combine.  Pour into a 9-inch casserole dish.  Cover with tomato slices.  Sprinkle with feta crumbles.  Bake until set, about 1 hour.  Serve hot or at room temperature.

Zucchini Bread (GUEST POST!)

This recipe comes from Patty Anderson and I hope you all enjoy it!!  I am a LOVER of zucchini bread and am excited for it to be coming into season again here shortly (at least down south where we're now living).  However, you can make this using frozen zucchini as well -- just be sure to thaw and allow to drain out the excess liquid for a few hours in a mesh strainer.  Now, on to Patty's sugar-free, grain-free, casein-free Zucchini Bread!

Patty's Zucchini Bread
Makes 1 loaf

2 1/2 cups almond flour, fine ground & sifted
1/2 cup coconut flour, sifted twice
1 tsp spoonable stevia powder
1/2 cup xylitol
1 tsp baking soda (all natural and aluminum free!)
2 tsp cinnamon
Pinch of sea salt
4 organic free-range eggs
2 tsp pure vanilla
1/2 cup coconut oil, melted
2 cups organic zucchini, finely grated (about 2 med/large zucchini)
Optional:  handful of chopped raw nuts

1).  Preheat oven to 350 degrees F.  Line a glass loaf pan with unbleached parchment paper and grease the sides with a teaspoon of coconut oil.  Mix almond flour, coconut flour, stevia powder, xylitol, baking soda, cinnamon and sea salt in a large bowl until well combined.

2).  In separate small bowl, lightly beat the eggs.  Stir in the vanilla, coconut oil and zucchini.

3.)  Make a well in the middle of your dry ingredients, then add the wet ingredients stirring well to combine.

4.)  Pour batter into prepared pan and bake for 50-60 minutes until light brown and a knife inserted into the center comes out clean.

Tomato Chicken Skillet

Here is a quick fix dinner that I make in a cast iron skillet and bring from stove top to table to serve.  Greek inspired, you can top with chopped black olives and fresh snipped basil or marjoram.  Eat as is or spoon over cooked quinoa (CORE Plan) or spiralized zucchini/yellow squash (ADVANCED Plan).

Tomato Chicken Skillet
Makes 4 Servings

4 free-range organic chicken breast halves (boneless, skinless)
Sea salt and fresh black pepper (to taste)
1 Tbsp coconut oil
1 1/2  cups zucchini, sliced (can use frozen)
3/4 cup green pepper, sliced
1 white onion, sliced and separated into rings
3 cloves garlic, minced
1/4 tsp fresh ground black pepper
1/4 cup filtered water
14 oz organic crushed tomatoes (homemade or jarred is best)
1/2 cup organic feta cheese, crumbled

1.) Sprinkle chicken with sea salt and black pepper, to taste.  Heat a large skillet over Medium-High heat.  Add coconut oil and chicken to skillet and cook until cooked completely thru (6-8 minutes per side). Remove chicken from skillet.

2.) Add zucchini, green pepper, onion, garlic, and black pepper to skillet.  Add water and reduce heat to Low/Simmer.  Cover and cook for 5 minutes, stirring once.
3.)  Stir in crushed tomatoes.  Bring to a boil then cover and lower heat to simmer for 5 minutes.  Add chicken breasts back to skillet and stir to combine.  Remove from heat.  Sprinkle with feta cheese and serve immediately.

Chickpea Stuffed Cucumber Cups

At a party a while back (it was a cocktail party, I had to wear a dress, which I don't necessarily enjoy so to distract my mind from the uncomfortableness, I focused in on the food tables looking for ideas!), they had these little things I thought were hummus stuffed sushi.  I took a bite, but to my surprise they were hummus stuffed cucumbers!  What a delight!  So...here's my take on this cute little appetizer.  I've adapted this recipe from one in my not always so healthy for you Better Homes & Gardens cookbook for Asian inspired deviled eggs.  These make great snacks or appetizers for your own party!
Chickpea Stuffed Cucumber Cups
Makes 12

2 organic cucumbers
1 cup organic chickpeas, drained and rinsed
1 inch of fresh ginger root, finely grated
3 scallions, finely chopped
1 garlic clove, finely chopped
1 Tbsp Bragg's liquid aminos
a dash of hot sauce or cayenne pepper (optional)
1 Tbsp white miso paste OR Healing Cuisine Mayonnaise
Fresh black pepper to taste

1.)  Start by cleaning and slicing the cucumbers into 1 1/2 inch thick coins.  Hallow out the centers using a melon baller or small spoon, leaving a little at the bottom of the cucumber so the filling doesn't leak thru.

2.) Throw all the remaining ingredients into the food processor or blender and puree (including the scooped out cucumber seeds!).  When it’s mostly smooth, spoon (or use a piping bag) filling into the cucumber cups.  Refrigerate two hours before serving.  If you have leftovers, try it spooned over a salad or as a spread for a sandwich or wrap!

Experiment with flavors!!  ... curry?  mint?  roasted garlic?  You can also stuff with various salads (egg salad, salmon salad, chicken salad, black eyed pea salad...etc).  Another idea is using raw zucchini cups instead of cucumber.   So many possibilities!

One Pot Wonders: Ratatouille

Another reason I looove One Pot Wonders is the fact that no matter the recipe, it always tastes better the next day!  It's something about leaving it in the fridge to let the flavors combine so perfectly that just gets me.

One Pot Wonders Day 3 is Ratatouille.  I started making and thoroughly enjoying this dish after the Pixar movie hit the screen in 2007.  It's one of my favorite movies.  When Dave and I got rid of cable TV two years ago to save up for opening our chiropractic office, we watched Ratatouille and No Reservations every weekend there for a good 2 months straight.  Love them both!  Rent them if you haven't seen 'em yet.  :)

Ratatouille
Makes 6 Servings

2 Tbsp coconut oil
4 cloves of garlic, minced
1 large organic eggplant, unpeeled & diced
1 cup organic button mushrooms, sliced
2 organic green bell peppers, diced
1 onion, diced
1 medium organic zucchini, halved & sliced
2 cups organic chick peas, rinsed and drained
1 Tbsp dried basil
1/3 cup tomato paste
1/2 cup red wine (CORE) or 1/2 cup vegetable broth (ADVANCED)
3 cups organic crushed tomatoes (glass jarred is best or Eden brand canned)
4 oz raw goat cheese (optional)

1. ) Heat oil in dutch oven over Medium heat.  Add garlic and cook about 1 minute, until fragrant.  Add eggplant, mushrooms, green bell peppers, onion, zucchini and basil.  Cook 5 minutes, stirring occasionally.

2.)  Add tomato paste, crushed tomatoes and red wine.  Turn heat to Medium-Low and simmer until veggies are cooked through and tender, about 20 minutes, stirring occasionally.

3.)  Stir in chick peas.  Simmer uncovered for about 10 minutes to reduce liquid, stirring occasionally.  Season to taste with sea salt and pepper.  Serve.  ** You can prepare up 2 days ahead of time and refrigerate/freeze.  Thaw completely before baking.**

4.)  Preheat oven to 350°F.  Spread ratatouille in 9-inch round or 8x8" glass casserole dish.  Bake about 20 minutes, until center is heated thru.  Spoon onto plates.  Top with goat cheese (optional).  Serve.


Other optional additions:  Replace the chickpeas with shredded chicken or turkey.  Add in a handful of chopped olives before baking.

One Pot Wonders: Thai Curry Stir Fry

Don't let this somewhat long ingredients list scare you -- this Thai Curry Stir Fry is a very quick meal to make!  In these fall and winter months, Dave and I usually opt for frozen organic vegetables as it's hard to find organic options fresh at the stores.  To help with meal planning, we double this recipe and have it for dinner that night and fridge/freeze the rest for a lunch or dinner later in the week.  It reheats well in a saucepan on the stove.

Personally, we love to eat this dish as is, but you might feel like it's missing a little something...  If you are Core Plan, you can serve over wild rice.  If you are Advanced, you can finely shred and chop organic zucchini or yellow squash to serve as your rice.  Delicious!

Thai Curry Stir Fry
Makes 4 Servings

1 Tbsp coconut oil
2 free-range boneless, skinless chicken breasts, raw, chopped
1/4 cup organic vegetable broth (sodium-free, sugar-free, read the label!)
2 cups organic broccoli, chopped
1 cup organic cauliflower, chopped
1 large onion, chopped
6 ounces organic snow peas, strings removed
1 organic red bell pepper, chopped
1 cup organic zucchini, chopped
1/2 cup carrots, chopped (CORE Plan only)
1 Tbsp fresh ginger root, minced
3 cloves garlic, minced
1/2 tsp ground coriander
1/4 tsp red pepper flakes
2 Tbsp organic red curry paste (green or yellow can also be used)
1 tsp sea salt
1 can organic full-fat unsweetened coconut milk
1/2 cup fresh basil leaves (optional)

1.)  In medium bowl, dissolve curry paste with 2 Tablespoons of the vegetable broth.  Add chicken pieces and stir well to combine.  Set aside.

2.)  In large skillet or wok, heat coconut oil over Medium heat.  Add carrot (CORE only) and stir-fry for 3 minutes.  Next, add onion, bell pepper, snow peas, broccoli, cauliflower and zucchini and stir-fry about 2 minutes.  Add ginger and garlic; stir-fry for 1 minute.  Add chicken mixture, stirring well to separate meat; cook for 3 minutes.

3.)  Increase heat to Medium-High.  Stir in coconut milk, coriander, red pepper flakes, sea salt and remaining chicken broth.  Cover and simmer, stirring occasionally, until vegetables are crisp-tender, about 5 minutes.  Uncover and cook for 1 minute to reduce any liquid.

4.)  Remove from heat. Stir in basil leaves.  Serve.

Quinoa Veggie Salad

Enjoy this super simple warm salad.  I enjoy bringing it to the office with me for lunch, and it also makes a quick side dish along chicken or salmon.  OR, you can stir in shredded chicken or salmon for a new dish!

Quinoa Veggie Salad
Makes 2 Servings

1/4 cup raw almonds, chopped
1/2 cup quinoa
2 tsp coconut oil
2 tsp olive oil
1 organic yellow bell pepper, diced
2 garlic cloves, minced
2 scallions, thinly sliced
1/8 tsp red pepper flakes
1 tsp chopped fresh thyme
1 cup filtered water
1/4 tsp sea salt
1 organic zucchini, diced
1 organic celery stalk, diced
Juice of 1 lime

1.)  Preheat oven to 300 degrees F.  Toast almonds until lightly browned, and fragrant, about 7 minutes. Remove from oven and set aside.  Meanwhile, place quinoa in a fine sieve and rinse under cold filtered water until the water runs clear.  Drain.

2.)  In a medium saucepan, heat coconut oil over Medium heat.  Add bell pepper, garlic, scallions, and red pepper flakes.  Saute until tender, about 6 minutes.

3.)  Stir in quinoa, thyme, filtered water, and 1/4 teaspoon sea salt.  Bring to a boil, reduce to a simmer, cover, and cook 7 minutes.  Stir in zucchini, cover, and cook until quinoa is tender but not mushy, 6 to 8 minutes longer.  Remove the saucepan from heat.

4.)  Stir in celery, almonds, and olive oil, season with sea salt and fluff with a fork.  Serve warm or cold.  Before serving, drizzle with fresh lime juice.

Zucchini & Mushroom Crumble

I'm still enjoying fresh zucchini over here.  This dish turned out more like a crumble than a casserole, and thus I titled it such.  The crumb topping is also great for fruit crumbles or other savory combinations of vegetables and meat.

Zucchini & Mushroom Crumble
Makes 8-10 Servings

6 medium zucchinis, washed and chopped or julienned
3 c mushrooms, mixed variety, wiped clean and chopped thin
1 medium onion, diced
1 Tbsp dried thyme and parsley (more/less to taste)
Sea salt and fresh black pepper to taste
1 tsp coconut flour
1 Tbsp coconut oil

CRUMB TOPPING
1 1/2 c almond flour
1/2 c sliced almonds
2 Tbsp cold, unsalted raw butter
3/4 tsp sea salt
1/3 c raw Parmesan cheese, grated

1.)  PREPARING THE CRUMB TOPPING:  Combine the almond flour, butter, and sea salt in a food processor and pulse until it resembles bread crumbs (or by hand, cut the butter into the flour with your finger tips until it resembles bread crumbs).  With your fingers, work in sliced almonds until well combined with the butter crumbs.  Refrigerate the crumble, covered, until the filling is ready to be topped.

To Make Your Own Almond Flour:  Pulse raw almonds in a food processor until they are a fine, fluffy flour.  Tilt the machine back and forth, side to side, to disperse the nuts every few pulses.  Don't switch the machine to ON (continuous) or you'll quickly wind up with almond butter.  Sift out any larger pieces of nuts using a medium-mesh strainer.  Measure out 2 cups of almond flour.  Freeze the rest.

Altering this recipe for fruit crumbles:  Add about 2 tsp spoonable stevia, 1 tsp nutmeg, and 2 tsp cinnamon to the crumble and prepare the same way.  (ginger, clove, anise, may also be good spicing options)

2.)  In a large skillet, heat about a Tablespoon of coconut oil of Medium/Medium-High heat.  Add the onions and saute for about 5 minutes, until softened.  Add zucchini, thyme, parsley, salt and pepper.  Stir to combine.  Cover and reduce heat to low.  Simmer for about 12 minutes with lid on until zucchini is slightly softened.

3.)  Remove lid and stir in the chopped mushrooms to the pan.  Return heat to Medium-High and cook for about ten minutes, until the mushrooms have shrunk and have released their water.  Sprinkle in the 1 teaspoon of coconut flour and stir to thicken the mixture/absorb the excess liquid.

4.)  Pour the mushroom-zucchini mixture into a large glass casserole dish (I used a 9x13 inch).  Spread crumb mixture evenly over top.  Sprinkle the top with grated Parmesan and bake at 300 degrees F for about 20 minutes, or until crumb topping is nicely browned and cheese is melted.  **Keep an eye on it tho, as almond flour/almonds/nuts brown more quickly than white flour or oats.  That's why we're cooking it at a lower temperature, but still watch out so your crumble doesn't burn!  It's too good to waste!  :)** 

TIP:  You can prepare this dish a day ahead of time.  You'll need to bake it for about 15 minutes covered with foil first, and then 15-20 mins uncovered if taking it from the fridge.

Tex-Mex Summer Squash Bake

A great use for the abundant summer squash!

Tex-Mex Summer Squash Bake

Makes 8 Servings (I multiplied by 6 for the party.  It was a hit!)

1 pound ground beef
1/4 c coconut oil, divided
3 organic medium zucchini, cut into 1/2 inch cubes
2 organic medium yellow squash, cut into 1/2 inch cubes
1 organic red bell pepper, chopped
1 organic jalapeno pepper, seeded and chopped
4 cloves garlic, minced
4 organic green onions, chopped -- white and green ends separated
Sea salt and pepper to taste
3 Tbsp organic tomato paste (from a glass jar, not a can -- BPA plastic)
1 Tbsp chili powder
2 tsp ground cumin
4 c black beans, rinsed and drained
1/2 c raw Parmesan cheese, grated and divided
1/4 c chopped fresh cilantro (from the herb garden!)

1.)  Cook the ground beef in a stainless steel or cast iron skillet over Medium heat until brown, about 10 minutes.  Drain off excess grease.  Set aside.

2.)  Preheat oven to 350 degrees F.  Spread the bottom of a 9x13-inch baking dish with about 2 teaspoons of coconut oil.

3.)  Pour the remaining coconut oil into a large stainless steel or cast iron skillet over Medium-High heat.  Cook and stir the zucchini, yellow squash, bell pepper, jalapeno pepper, garlic, and the white parts of the green onions until the vegetables begin to soften, 5-8 minutes.  Sprinkle with sea salt and black pepper.  Stir in the tomato paste, chili powder, and cumin.  Allow the mixture to simmer until the spices are fragrant, about 1 minute.  Remove from heat.

4.)  Stir in the browned ground beef, black beans and 1/4 cup of Parmesan cheese until well combined. Adjust salt and pepper if necessary, and spread the mixture into the prepared baking dish.  Sprinkle the top with remaining 1/4 cup of Parmesan cheese.

5.)  Bake in the preheated oven until bubbling in the center and cheese is browned, 20 to 25 minutes.  Sprinkle the remaining green onions (green tops) and cilantro over the top and serve.

Zucchini Hummus

So I recently went in to have my allergies, among other things, tested naturally by my naturopath, and my results showed I cannot do garbanzo beans anymore.  I'm SO SAD!  (But at the same time excited to know what my issues are to help some hormonal issues heal up..)  Since I am absolutely addicted to hummus, I needed another option for making it.  I've had zucchini hummus before at a raw restaurant here, called Ecopolitan, and really liked it, so I decided to blend some up at home.  Using zucchini as the base for hummus will make it much easier to digest rather than using the traditional garbanzo beans.  Even if you don't have a food allergy to chick peas, give it a try -- you will be pleasantly surprised.  :)


Zucchini Hummus
Makes About 3 Cups

2 raw organic zucchinis, chopped
1/2 cup fresh lemon juice
1 tsp sea salt (more/less to taste)
1 1/2 tsp cumin
1 cup raw tahini
4 Tbsp olive oil
1/2 cup raw sesame seeds

First, soak the sesame seeds for about 4 hours in a bowl of water to soften them.  Drain seeds in a mesh strainer (discarding the water) and dump all ingredients into food processor or blender.  Blend on High speed stopping frequently to scrape down sides.

Gingered Chicken or Salmon

Gingered Chicken or Salmon
Makes 4 Servings

2 Tbsp coconut oil
3 Tbsp grated fresh ginger root
2 Tbsp freshly ground black pepper
Sea salt to taste
4 wild caught salmon fillets or 4 free range chicken breasts

Side Dish:
1 bunch organic kale, deveined and chopped
1 medium  organic zucchini, chopped
1 organic red bell pepper, chopped

Ginger Vinaigrette
1 Tbsp grated fresh ginger root
2 Tbsp chopped shallot
2 Tbsp balsamic vinegar
1 Tbsp fresh lime juice
1 Tbsp Bragg Liquid Aminos
1/2 c coarsely chopped cilantro
1 Tbsp sesame oil
1/2 c olive oil
Sea salt and pepper to taste
[Combine ginger, shallot, vinegar, lime juice, liquid aminos, cilantro and sesame oil in blender.  With blend running on medium, slowly drizzle in olive oil to emulsify.  Season with sea salt and pepper.  Refrigerate leftovers up to 2 days before discoloring.]

1.)  Heat coconut oil in a large stainless steel skillet over medium-high heat.

2.)  In a small bowl, combine the ginger and pepper.  Rub each salmon fillet/chicken breast with the ginger-pepper mixture, season with salt to taste.  Sear each fillet skin side up until a nice crust forms.  Flip the fillets and repeat the process, cooking until heated thru (do not over cook!).  If using chicken, cook well until juices run clear.  Remove from skillet and set on a warm platter.

3.)  Add chopped vegetables to same skillet and saute until heated thru but still crisp.  Place scoop of vegetables onto center of each plate.  Surround with chicken/salmon.  Drizzle each plate with vinaigrette and serve.

Mixed Veggies Stir Fry

Mixed Veggies Stir Fry
Makes 2-3 Servings

2 organic carrots, sliced
1 bunch of organic kale, deveined and chopped
2 small organic zucchinis, sliced
1 medium organic yellow squash, peeled and chopped
1 organic red bell pepper, diced
1 medium onion, chopped
2 cloves garlic, minced
1 avocado, sliced
1 free-range egg per person
1 Tbsp coconut oil

1.)  Prepare all the vegetables (we try to wash, peel and chop up all of our vegetables each week when we get home from the grocery store and store them in glass containers thru the week so we're ready to whip up a quick meal like this one after a late night of work.  We then freeze any veggies that weren't used before they spoil.  Frozen veggies will also work well with this recipe!).

2.)  Heat your wok or large skillet over Medium-High heat.  Add 1 Tbsp coconut oil to the pan.  When heated, add the carrot, onion, bell pepper and kale.  Stir and cook for about 3 minutes.

3.)  Add garlic, zucchini, and yellow squash to pan and continue to stir and cook for about 6-8 minutes until carrots are softened.  All veggies should be heated thru at this point.  Turn heat to low and let simmer while cooking eggs, adding sea salt and pepper to taste.

4.)  In a separate skillet, over Medium heat, add a teaspoon or two of coconut oil to coat pan.  Crack each egg into the skilled to fry on each side.  It's great to leave the yolks runny -- mixes great with the vegetables -- but cook thru to your liking.

5.)  Plate the stir fry and top each plate with an egg (or two) and slices of avocado.  Enjoy one of the quickest meals you've possibly ever made!  :)

Zucchini Creole

We had a huge tub of sliced zucchini in the freezer since this past fall.  We stocked up at the farmers markets and grocery store sales.  I finally decided to use some of it, and this is a great way and QUICK!  I call it Zucchini Creole.  We'll also be trying a zucchini soup sometime soon to use up the rest.   Serves 8

1 1/2 to 2 pounds sliced zucchini
8  ounces sliced mushrooms
1  large green bell pepper, cut into thin strips
1  clove garlic, minced
2  teaspoons dried leaf basil, crumbled
1  tablespoon unrefined coconut oil
1/2 teaspoon sea salt
1/4 teaspoon pepper
1/2 teaspoon spoonable Stevia
1/4 teaspoon Worcestershire sauce
2  medium tomatoes, peeled and chopped

1.) Combine zucchini, mushrooms, green pepper, garlic, basil, coconut oil, sea salt, pepper, Stevia, and Worcestershire sauce in a large skillet; cook for 5 minutes over medium heat.

2.) Add tomatoes and cook for 5 minutes more, or until tender.  Serve immediately.
